The original Tarragon brand is now present on the water’s edge of St Julian’s. A new location that opens up stunning 180-degree sea views that complement the seafood delicacies that form the heart of the new menu.

Sole, Seabar by Tarragon is a successor set to take the Tarragon legacy, which dates back
to 2007, to new heights with a menu that prioritises local fresh fish and resources, each dish
an elegant, luxurious touch. Complemented by an exclusive cocktail and wine list, all bearing the creative imprint of renowned chef personality Marvin Gauci. Stunning dining is matched by stunning sea views from every table, with a lounge-bar area for those who want to take their time savouring the cocktails.

About Us

With Sole, Seabar by Tarragon, chef personality Marvin Gauci has given new life to the
space formerly occupied by the highly-successful Susurrus. This new concept builds on all
the accolades that the original Tarragon – now open in St. Julian’s – had attracted, while giving it a unique identity that highlights the flavours of Malta’s local fresh fish and seafood.

Tarragon is one of the stars that continues to shine brightest on the Maltese culinary
landscape, the name associated with creative fine dining as only Marvin himself knows how
to craft. Throughout its decades long history, it was a trailblazer on the local restaurant
scene, pioneering a ‘farm-to-fork’ approach where possible, taking a social conscience
approach to fine dining and succeeding in using locally-sourced ingredients to minimise the
eco-footprint.

This is an ethos that is also being extended to Sole, Seabar by Tarragon. The new concept
is already living up to the numerous Awards that Tarragon has been bequeathed with
through the years, every single year since its inception in 2007 leading to new honours and
recognitions.

Tarragon is associated with the highest awards in all categories – from Best Overall
Restaurant to Most Romantic, Best Wine Experience, Top Ambiance, Best Service and
many more. It has defined the standard of excellence for Maltese fine dining, an

While inspired by European cuisine, the menu at Sole, Seabar by Tarragon highlights local fresh fish and resources, strengthening the sustainable approach that the brand is known for. Expect classic seafood dishes that are given Marvin Gauci’s own unique twist. Little details, such as using molecular shells instead of molecular sphere to be in keeping with the seafood theme, make it all the more of an exclusive experience. The menu includes classics and platters to share for that social dining vibe, with luxury ingredients like oysters and premium sturgeon caviar taking centre stage. Guests will also enjoy award-winning dishes that were created by Marvin and featured in his debut cookbook Culinary Trailblazer.

Our specialist mixologists have created an eclectic menu that offers classics, a collection of cocktails especially curated by the team, signature Sole cocktails (those including artwork inspired by the ocean are truly an experience to enjoy) and Marvin’s own specialties. Each cocktail tells a story of flavours and fine ingredients. The menu includes a selection of Mocktails, alcohol-free cocktails replete with fruity freshness.

With a fully retractable roof, summer dining under the stars is particularly special, while the indoors cocktail area offers more of a lounge feel. Every single dining table boasts the stunning sea view of the Mediterranean, Sliema and St Julian’s shimmering in the distance. The bright, flawlessly decorated space is perfect for holding that special event or function – whether it’s a wedding, corporate event or something more intimate. And yes, there are plenty of Instagrammable spots and opportunities too, thanks to the special decor and views.
